The nose is amazingly, explosively floral, bringing together a cottage garden's worth of rich aromatics, with sweet lilac and spicy daphne dominating. The wine enters the palate as a rush, with waves of sweet stone fruit crashing over the tongue, filling the mouth with fruit and crushed herbs. The finish is complicated by background notes of crackly toffee and green almond skin, giving way to a impressively long finish.
For this release, we picked very ripe Sauvignon Blanc grapes and froze them solid. We pressed them while still frozen, extracting ony the sugars, flavors, and acids - leaving the bulk of the water behind. The process yields an incredibly sweet, concentrated liquid that we allow to ferment into wine.
